           Bidlea Dairy

            of Holmes Chapel, supply fresh milk to our farm shop &amp;amp; café. The Brown family have been raising the Bidlea girls for three generations on their farm in Holmes Chapel; the herd’s bloodline can be traced back 100 years! With over 900 Holstein-Friesian cows, current farmers Adam &amp;amp; Becky have created the Bidlea brand, taking milk &amp;amp; cream into local farm shops, delis &amp;amp; cafés. Most recently Bidlea have ventured into ice cream production, in their farm based dairy.

      <title>Cheerbrook Snowdon Trek</title>

         Our fabulous team here at Cheerbrook will be walking Snowdon on Monday 28th June to raise funds for our local district nurses (via Mid Cheshire Hospitals Trust), who offered such amazing support &amp;amp; compassion to Andrew Shufflebotham &amp;amp; family throughout his illness last year.
         
                  &#xD;
  &lt;div&gt;&#xD;
    &lt;br/&gt;&#xD;
    &lt;div&gt;&#xD;
      &lt;b&gt;&#xD;
        
                        
            Cheerbrook’s Charity of the Year
           
                      &#xD;
      &lt;/b&gt;&#xD;
    &lt;/div&gt;&#xD;
    &lt;div&gt;&#xD;
      
                      
           Our local District Nurses go above &amp;amp; beyond to provide support in our community to those going through difficult times. In 2020, Sarah &amp;amp; family were overwhelmed by the care, compassion &amp;amp; empathy shown by the District Nurses in helping to care for Andrew during his battle with cancer. 
          
                    &#xD;
    &lt;/div&gt;&#xD;
    &lt;div&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/div&gt;&#xD;
    &lt;div&gt;&#xD;
      
                      
           As such, we have chosen the local District Nurses as our Charity of the Year for 2021, with every 5p carrier bag being donated &amp;amp; raising additional funds through events across the year; such as our Christmas Tasting Evening. 
          
                    &#xD;
    &lt;/div&gt;&#xD;
    &lt;div&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/div&gt;&#xD;
    &lt;div&gt;&#xD;
      
                      
           Carole Salmon, Community Fundraiser for Mid Cheshire Hospitals Charity said, ‘As one of the best known farms shops and cafes in Cheshire, we are delighted to be supporting the team with their fundraising. We are excited to see their progress with raising funds for the local district nurses and encourage members of the community to get involved'

           Our team here at Cheerbrook were keen to take on a challenge in memory of Andrew, to boost fundraising for such a fantastic local cause. Team Cheerbrook will be taking on Snowdon on Monday 28th June, fuelled by Cheerbrook Chompers of course!

    &lt;div&gt;&#xD;
      
                      
           Our team of 15 butchers, bakers &amp;amp; coffee makers will be taking on the Pyg track at a distance of 5.19km, with a 704m ascent – taking around 3 hours.

    &lt;div&gt;&#xD;

          Before putting on your apron, get out your pens, pencils &amp;amp; glitter to design your biscuit on our colouring page. Add your favourite flavours, colours &amp;amp; decorations to create your own unique biscuit!

          Step 1 – Choose the best cut for you

          Fillet – the prized cut &amp;amp; the most expensive of the bunch. Fillet is a lean cut, best served rare. From the tenderloin muscle, towards the back of the ribs, having not taken any weight the muscle is very tender, almost melt in the mouth.

         There's been so much talk recently in the media about buying grass fed beef, the message can be confusing! What are we buying? Is it better for us? What does that mean for the animal?

  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          With Cheerbrook's roots firmly in Andrew's original Angus Aberdeen herd, we thought we'd explain, clear &amp;amp; simple, what grass fed beef really means. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;b&gt;&#xD;
      
                      
           First a little geography... 
          
                    &#xD;
    &lt;/b&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Grass fed beef is far more of an issue in the USA, where cattle are reared more intensively &amp;amp; can be fed on grains &amp;amp; manufactured feed year round. Finding beef that has been reared on natural pastures is much harder in America, hence the need for clear 'grass fed' labeling. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;b&gt;&#xD;
      
                      
           On the farm... 
          
                    &#xD;
    &lt;/b&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Here in the UK there is much less of an issue surrounding grass fed beef. With more traditional farming methods &amp;amp; smaller scale farms, most beef cattle in the UK will be grass fed for some proportion of the year - most likely during the summer months when herds go out to graze on pasture - with top ups of silage (dried grass) during the winter months. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Here at Cheebrook our Angus beef is reared by the Bourne family, in the most natural way possible. At the foot of Bickerton hill, Rob's herd go out to graze on natural vegetation, herbs &amp;amp; grasses in the warmer months &amp;amp; are fed a mixture of silage &amp;amp; grain over the colder, winter months. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;b&gt;&#xD;
      
                      
           In our butchery... 
          
                    &#xD;
    &lt;/b&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          We butcher all of our beef right here, dry ageing for around 25 days, cutting &amp;amp; preparing by hand. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          As well as filling our butchery with beautiful beef, our butchers prepare meat for our ready to cook range, deli pies &amp;amp; cafe dishes. 
         
                  &#xD;

  &lt;div&gt;&#xD;
    &lt;b&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/b&gt;&#xD;

           On your plate...

          Down to the important part - the taste! Grass fed beef has a fuller flavour, imparted by the natural minerals from its grazing, with marbling from muscle development adding succulence &amp;amp; a tender, melt in the mouth texture.

    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;

           The verdict...

         We flippin' love pancakes! With Shrove Tuesday just around the corner (25th February) we thought we'd share our chefs signature pancake recipe with you all &amp;amp; a few inspired toppings &amp;amp; fillings so you can have a cracking pancake day!

          Pancakes are humble things with just a handful of everyday ingredients, to bring the best out in this simple pleasure its essential to use the best ingredients. Fresh, free-range eggs add a golden glow to your pancakes, with a more natural diet these eggs are rich in nutrients. Our free-range eggs are delivered fresh from IF Lloyds of Huxley, just a few miles from Cheerbrook. For extra egg-citement choose our coloured shelled eggs.

            Ingredients:

           100g Plain Flour 
          
                    &#xD;
    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      
                      
           2 Eggs 
          
                    &#xD;
    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      
                      
           300ml Milk 
          
                    &#xD;
    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      
                      
           1tbsp Sunflower Oil 
          
                    &#xD;
    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;i&gt;&#xD;
      
                      
           Get cracking: 
          
                    &#xD;
    &lt;/i&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Whizz together all of the ingredients in a food processor, blender or whisk in a large mixing bowl until well combined. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Pop the batter in the fridge &amp;amp; leave it to rest for 30 min whilst you prepare your fillings &amp;amp; heat the oven on low. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Heat a frying pan over a medium heat, wipe with oiled kitchen paper. 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Pour in a ladle of batter into the pan &amp;amp; cook for 1 min each size, flip if your brave enough! 
         
                  &#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Once cooked flip onto a plate &amp;amp; keep warm in the oven &amp;amp; keep cooking. 
         
                  &#xD;

          If you're looking for a richer, more autumnal white than you've been drinking recently, you'll find it in Chenin Blanc. Good Chenin is ideal for people who secretly like Chardonnay but don't care to admit it! It's rich, voluptuous &amp;amp; lush, but has a natural acidity that stops it being cloying. 
          
                    &#xD;
    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;b&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/b&gt;&#xD;

Wheras Laughing Giraffe is more restrained, with a mainly fruity result, notes of blackberries &amp;amp; plums; with a spicy, smoky-oaky take.

         It's been an exciting few weeks here at Cheerbrook with lots of projects underway,  recipe testing of scrumptious summer delights &amp;amp; preparations for the Nantwich Food Festival in full swing. Here's a little peek into what we've been working on...

         Wignalls Yallo rapeseed oil is produced on Standish Hall Farm in Lancashire by John &amp;amp; Clare who brought the derelict farm back to life with years of love, care &amp;amp; attention. We loved experimenting with Yallo's infusions, frying, roasting, baking &amp;amp; drizzling it - so much so we've launched their range in our farm shop for you to enjoy too!

          Lovingly reared by Ed Massey on his family farm in Gawsworth, Cheshire, our butchery counter is filled with beautiful spring lamb. 
          
                    &#xD;
    &lt;span&gt;&#xD;
      
                      
           The season for spring lamb runs from February through to June &amp;amp; produces firm, slightly pink lamb with a velvety texture - considered the most tender lamb.

    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      
                      
           Born in late winter, spring lamb is so succulent because of it's diet. Having suckled on it's mothers milk for weeks, then fed on fresh spring pasture the meat takes on a delicate flavour. Much more subtle than later season lamb. As the lush spring grass is integral to spring lamb, the great British weather plays a pivotal role in when the spring lamb season begins each year. A combination of warm &amp;amp; wet weather is needed for the pasture to grow &amp;amp; the lambs to be turned out to feed.

  &lt;div&gt;&#xD;
    &lt;span&gt;&#xD;
      &lt;br/&gt;&#xD;
    &lt;/span&gt;&#xD;

          Whilst the care of the lamb on the Massey farm plays a significant part in the fantastic texture &amp;amp; taste of our spring lamb, the skills of our butchers is equally as vital. Using a 'seam' butchery technique we carefully trim the meat to leave only the prime pieces of meat. No extra fat, bones or unnecessary waste. Meaning you get exactly what you're paying for, simply ready to cook. Even our lamb legs can be boned &amp;amp; rolled for ease of carving - just ask our butchers.

         British asparagus is renown as the finest you can serve, with a distinct flavour &amp;amp; vibrant green colour adding a freshness to spring dishes. The British growing season runs from the end of April through until June &amp;amp; this years crops are some of the best in recent years, with thanks to a splash of Easter sunshine. 
         
                  &#xD;
  &lt;div&gt;&#xD;
    &lt;br/&gt;&#xD;
  &lt;/div&gt;&#xD;
  &lt;div&gt;&#xD;
    
                    
          Fresh from the farm, here at Cheerbrook you can pick up a bunch of local new season asparagus from Hungersheath Farm in Shropshire; just 12 miles from our farm shop.

    &lt;br/&gt;&#xD;

          Asparagus is such a versatile dish, which packs a nutritional punch too - rich in vitamins A &amp;amp; C, potassium, iron &amp;amp; calcium. Cook simply as below:

    &lt;ul&gt;&#xD;

            Boil 3-4 minutes

            Grill 6-8 minutes

          To keep your asparagus as fresh as the day it was picked store in the fridge propped up in a jug of water, or if you're short of space wrap in a damp piece of kitchen roll &amp;amp; tuck away in the salad drawer.
